Sweet Potato and Corn Detox Soup Recipe
This recipe will be good for 3-5 servings. It is substantial
enough to work as a complete meal, which is kind of the idea.
What you will need to have on hand:
1 tablespoon olive oil
1 onion,I like red onions for the color and mildness, finely diced
2 garlic cloves, crushed up
7 ½ cups of vegetable stock
2 teaspoons ground cumin
1 medium sweet potato diced
1 lb corn kernels (fresh or frozen)
A pinch of Sea salt
Lime wedges to serve with the soup.
Here is how you do this:
Heat the oil in a large soup pan and gently fry the onion
on medium/low heat until soft (5 to 7 minutes). Then Add the
crushed garlic and gently fry for another 2 minutes.
Now add 1/14 cups of the vegetable stock to the pan.
Bring it to a boil, reduce heat then simmer for 10 minutes.
Add the cumin and diced sweet potato and simmer a further 10 minutes.
Now and add the corn and remaining stock. Simmer another
10 minutes or so.
Remove soup from heat and let cool slightly. Put half
of the soup to a blender or food processor and blend until
smooth. Stir the smooth soup into the pan and mix together
with the chunky remaining soup and gently stir together.
Serve warm with lime wedges on the side.
The great thing about good detox recipes is you can become healthier
and lose weight while still enjoying delicious food.
